Wheat Berry Pesto Salad

4 cup salted water
1 cup Hard winter wheat berries, or Einkorn (both at the shop)
1 cup Pesto (or to taste)
Sunflower seeds, or other seeds of your choice
Cheese of your choice – we have 15 kinds now
Bring water to a boil.
Add wheat berries and simmer for 1-2 hours. You want them chewy and not hard.
Drain the wheat berries.
If using all of the berries, add 1 Cup pesto, or to taste. (If you just want to make single-serving sizes, use ¼ – ½ C berries, adding pesto one spoonful at a time to taste)
Add seeds
Mix until everything is coated and top with a grating of your favorite cheese. cut cheese works great as well! ENJOY!
