2 cups water – to cook grain in
1 cup Farro or Einkorn – Both at The Soup Shop
1 large onion chopped
2 cloves garlic peeled and sliced
10-20 cherry tomatoes – we all have some – happy to share!
1 teaspoons coarse sea salt- Check out our Salts at the SHOP!
1 tablespoon olive oil, plus extra for drizzling – We sell the Best Olive Oil EVVA!
Basil if you have it, or Spinach works too! All greens are GOOD!
Grated parmesan cheese – Spring for the good stuff – nothing pre shredded – ask me FMI
Place water and farro in saucepan to presoak (30 minutes sufficient) while you prepare the other ingredients. Add each ingredient to the pot while grain is soaking! Thinly slice garlic cloves as well. Halve or quarter tomatoes. Add salt, and chives if you like- 1 tablespoon olive oil to pan, cook for 30 minutes. Bring to a boil, then reduce to a gentle simmer, stirring occasionally. So soak 30-to one hour and cook 30 minutes until cooking water is almost completely absorbed. If needed cook it for 5 additional minutes, until grain is tender. I personally like it a bit chewy – Now drizzle a bit of oil add any herbs you like and serve as is or over Roasted VEGGIES – Bam! You have a high protein dinner that is just about Perfect! ENJOY – and share some too!
