Beet and Radish Tartare


Ingredients:
Local Beets, finely diced
Local Radishes, finely diced
Avocado, mashed
Fresh Dill, chopped
Lemon juice
Capers, chopped
Olive oil
Salt and pepper

Instructions:
Combine finely diced Beets and Radishes in a bowl with mashed avocado, chopped Dill or any herb you like lemon juice, chopped capers, a drizzle of olive oil, salt, and pepper. Mix gently. Serve this vibrant tartare on toasted slices of baguette or as a filling for lettuce wraps for a refreshing and nutrient-dense appetizer.
