Autumn Harvest Veggie SOUP – Susan Style

1/2 cup extra-virgin olive oil
1 large diced onion
1 teaspoon salt
6 cloves finely chopped garlic
3 carrots, diced
1 cup diced celery
1 tablespoon Herbes de Provence
½ cup dry white wine
6 cups Veggie or chicken broth – easy to make
Your favorite herb or spice
1 sprig rosemary
1 butternut squash, peeled and cubed or any other squash you have!
4 cups finely chopped kale leaves or spinach works too
1 large tomato, diced NO CANNED tomatoes please
Cook together until squash is tender and enjoy!
