SENDING LOVE and Soup News from SOUTH CAROLINA!!!!

Quite Beautiful here in the” LOW Country” as they call it – pretty chilly for me

Floyd County is REALLY, Really COLD! Keep the fire going – stay warm – stay safe, and share some LOVE – SOUP LOVE! Warms a body and soul! Remember a crock pot on all days warms the house too!
Wanted to reach out say hello and send some SOUP Love! Everyone can use a little soup and a hug!
Sure do miss your smiles  – Yet you can bet we will be back in the early Spring with all kinds of goodness!
* We so miss our local farms and the bounty of Floyd County! Real Food that we so LOVE!

For now here is what in in my Soup Pot – ENJOY!
Susan’s Thick Rich and Yummy Onion SOUP!

6 onions sliced(about 1/4 inch) roasted in the oven on sheet pans for 10-15 minutes – 350o add a bit of water to the pans and about 1/4-1/2 cup olive oil cook until lightly browned then add to crock pot
6-8 pods of garlic with onions roasted as well- they roast nicely whole no need to slice just smash!
4-5 cups broth – any or water works just fine in your crock pot
2 cups chopped potatoes added to broth – add seasonings as you like

Cook in Crock for 2 hours on high add roasted onions.garlic and cook for another hour – rice works well if you have no potatoes
Seasonings as you like – sea salt, black pepper, white pepper, white wine, chives, garlic – any herb you like – I love adding Rosemary- amount depends on your taste – but go slow you can add more!
Cook on High for at least a few hours – WARMS UP THE Room while it cooks (YEA) Use an immersion blender to puree if you like or not – you choose!
Serve warm -add CHEESE or cream if you love them like I do !!
