Non-traditional Bruschetta- Soup Shop Style
Ingredients:
½ loaf of a Big Indian Bread – your fav! cut in halves
Butter/olive oil
1 clove garlic, cut in half.
1 medium tomato, cut in half- Riverstone Heirlooms!!
1-2 medium tomatoes, sliced thinly
Balsamic vinegar, optional
Fresh basil, one leaf per slice
Shredded Parmesan cheese or Sharp Cheddar
Directions:
Toast the slices so they’re crunchy.
Remove the slices from the toaster and place on a serving plate. Butter or lightly drizzle with olive oil.
Lightly, let me say that again, lightly rub a cut side of the garlic clove over the entire surface of the toast slices. It’s really easy to use a heavy hand.
Rub a cut slice of tomato over the surface. You can use a heavier hand here because you want that summery tomato flavor. If some seeds get on the toast, it’s ok.
Cut tomatoes in half and slice thinly.
Drizzle a small amount of balsamic vinegar, optional
Top with shredded Parmesan or cheddar
Place a basil leaf in the middle of each slice. Enjoy!
